Job Overview

We are hiring a highly experienced, strategic, and performance-driven Food & Beverage Director to lead and manage all food and beverage operations across multiple outlets within a luxury hotel or resort in Jeddah, Saudi Arabia. This senior leadership role is responsible for driving revenue growth, ensuring exceptional guest experiences, maintaining world-class culinary and service standards, and optimizing financial performance across all F&B operations.

The Food & Beverage Director will have full accountability for restaurants, bars, lounges, banquets, catering, room service, and special events. You will lead a large, diverse team of outlet managers, chefs, service leaders, and support staff while working closely with executive management to align F&B strategies with the overall business objectives of the property.

This role requires a strong understanding of luxury hospitality operations, financial management, guest engagement, brand positioning, and people leadership. The ideal candidate will bring international exposure, a passion for excellence, and a proven track record of managing complex, multi-outlet F&B environments.


Key Responsibilities

Overall Food & Beverage Leadership

• Provide strategic leadership and direction for all food and beverage operations across the property
• Oversee multiple outlets including fine dining restaurants, casual dining venues, bars, lounges, banquets, catering, and room service
• Ensure F&B operations align with the hotel’s brand standards, positioning, and guest experience goals
• Act as a key member of the executive leadership team, contributing to overall hotel strategy

F&B Strategy, Revenue & Profitability

• Develop and implement comprehensive food and beverage strategies to maximize revenue and profitability
• Drive top-line growth through innovative concepts, menu engineering, and promotional initiatives
• Analyze financial performance and identify opportunities to improve margins and cost efficiency
• Balance guest satisfaction with commercial performance and operational sustainability

Guest Experience & Service Excellence

• Ensure consistent delivery of exceptional guest experiences across all F&B outlets
• Establish and maintain high service standards aligned with international luxury hospitality benchmarks
• Monitor guest feedback, online reviews, and satisfaction scores
• Lead service improvement initiatives based on guest insights and performance data
• Personally engage with VIP guests and ensure memorable dining experiences

Culinary Direction & Menu Development

• Work closely with Executive Chefs and culinary teams to develop innovative, market-relevant menus
• Ensure menu offerings reflect brand positioning, local preferences, and international trends
• Approve menu pricing, portion control standards, and product specifications
• Drive menu engineering initiatives to optimize contribution margins and guest appeal
• Ensure consistency in food quality, presentation, and taste across all outlets

Financial Management & Cost Control

• Develop and manage F&B budgets, forecasts, and financial targets
• Monitor revenue, cost of goods sold (COGS), labor costs, and operating expenses
• Implement strong cost control measures without compromising quality or service
• Analyze financial reports and take corrective actions to address variances
• Ensure profitability across all outlets and events operations

Leadership & People Management

• Lead, inspire, and develop outlet managers, chefs, supervisors, and service teams
• Build a high-performance culture focused on accountability, service excellence, and teamwork
• Oversee workforce planning, staffing levels, and succession planning
• Support talent development, training programs, and career progression initiatives
• Foster a positive, inclusive, and professional work environment

Events, Banquets & Catering Operations

• Oversee large-scale banquets, conferences, weddings, and special events
• Ensure flawless execution of events in line with client expectations and brand standards
• Coordinate closely with sales, events, and operations teams
• Ensure optimal utilization of banquet spaces and event resources
• Drive banquet revenue growth while maintaining service quality and cost control

Compliance, Food Safety & Licensing

• Ensure full compliance with food safety, hygiene, and sanitation standards
• Ensure adherence to local health regulations, licensing requirements, and alcohol service laws
• Implement and monitor HACCP, food safety audits, and quality assurance processes
• Promote a strong culture of hygiene, safety, and regulatory compliance

Marketing, Promotions & Brand Positioning

• Collaborate with marketing teams to develop F&B promotions, campaigns, and brand activations
• Support hotel marketing initiatives through strong F&B storytelling and experiences
• Lead seasonal promotions, themed dining experiences, and special events
• Ensure F&B outlets contribute positively to the hotel’s overall brand image

Performance Monitoring & KPI Management

• Monitor key performance indicators such as revenue, average check, covers, labor productivity, and guest satisfaction
• Track outlet-level performance and identify improvement opportunities
• Ensure consistent reporting and performance reviews across all F&B units
• Drive continuous improvement through data-driven decision-making

Reporting & Executive Communication

• Prepare detailed operational and financial reports for senior management
• Present F&B performance, risks, and improvement plans to the General Manager and ownership
• Support strategic planning, budgeting, and investment decisions
• Ensure transparent communication and alignment with executive leadership


Qualifications & Educational Requirements

• Bachelor’s degree in Hospitality Management, Hotel Management, or a related field
• Advanced hospitality or business management qualifications are an advantage
• Strong foundation in food & beverage operations, service standards, and financial management


Experience Requirements

• Minimum 9 years of experience in food and beverage operations within hotels or resorts
• Proven experience in senior F&B leadership roles managing multiple outlets
• Strong exposure to luxury or upscale hospitality environments
• Experience managing large teams and complex F&B operations
• International hospitality experience is highly preferred
